Grandma's Menu



Growing up in the south, my grandma used to fry everything: from tomatoes to ice creams. She also liked to add a few table spoons of butter to the dishes she made. Bacon was a staple at our house. She put bacon on EVERYTHING. Later she was diagnosed with type 2 diabetes. Things had to change. I'd like to share her menu with you - she prepared these dishes most often: For breakfast: one slice of whole wheat bread(toasted), one boiled egg/non-fat yogurt/cottage cheese and one piece of fruit For lunch: fresh green salad and grilled chicken breast or fish, one piece of whole wheat bread For snack: one piece of fruit - apple, kiwi or orange, or some strawberries, blueberries or raspberries For Dinner: fresh vegetables(steamed), small serving of fish or meat and a fruit Overall my grandma tried to eat more vegetables and fruits. We always had a variety of fruits at home. She also tried to cut sugar and fat intake.

Hi Ariel, it is really great that your grandma changed her eating habits after she was diagnosed with type 2 diabetes. Some foods that I researched that are great for controlling your blood sugar (and avoiding dangerous spikes) are beans, oatmeal, fish, non-fat yogurt, unsalted almonds, non-starchy vegetables, egg whites, avocado and low-sugar fruits like blueberries, raspberries, blackberries, cranberries, pears, cantaloupes, grapefruit, and cherries. I have also read that you should AVOID high-sugar fruits like watermelon, pineapple, raisins, apricots, grapes, and oranges. I hope this small list helps everyone struggling with the disease.

Hi Ariel, I never heard of fried ice cream and that is very interesting. I like this menu your grandmother have because I have type 2 diabetes, and I need to try this.

I too like organic gardening. I am looking forward to working in my garden soon. There is nothing better than a fresh tomato from the garden.

Ariel - This menu sounds so good... almost like you're not even on a diet. I am going to give it a try this weekend and I will let you know what I think!
